San Ignacio, in Peru's Cajamarca region, has quietly become one of South America's most exciting spots for Geisha. The variety needs altitude and patience to show what it can do, and San Ignacio's growers have both: long, careful washed fermentations that let the coffee's naturally floral, tea-like character come through without pushing it.

The cup is classic Geisha: jasmine and peach up front, a honeyed sweetness underneath. A small, limited lot.
