From Chiapas, Mexico's southernmost coffee state, this lot is decaffeinated using the Swiss Water Process — a chemical-free method that uses only water, temperature and time to strip out caffeine while preserving the bean's natural character. Grown from the H1 Centroamericano, an F1 hybrid bred for disease resistance without sacrificing cup quality.
